Michel Lemoine has firmly established himself as one of the regions leading gastronomic talents since turning his attentions away from London where he schooled in the kitchens of the Roux brothers.

Michel gained considerable experience as Sous Chef in two of London's most renowned Restaurants, 'Bibendum' where he worked alongside Simon Hopkinson, and 'Alistair Little' on Frith Street. This ensures that Byzantium is synonymous with quality, consistency and for offering something that little bit different.
